Pasta with seasonal vegetables

Ingredients


  • 1 cup Pasta
  • 1 teaspoon Olive oil
  • 1 tablespoon Butter
  • 1/2 Leeks (finely chopped)
  • 1/2 Red pepper (1" piece)
  • 1/2 Green pepper (1" piece)
  • 2 tablespoon Sweet corn
  • 1/2 teaspoon Olives black
  • 8-10 French beans (1" pieces)
  • 1/2 teaspoon Chili flakes
  • 1/3 teaspoon Thyme (herb)
  • 1 Tomato (finely chopped)
  • 10 Basil leaves (roughly chopped)
  • 1/4 teaspoon Ground black pepper
  • Salt to taste
  • 1.5 teaspoon Cream 
  • 1 teaspoon Cheese (grated)


Directions


  1. Boil pasta in water with a few drops of oil for 10-12 min
  2. Then refresh the pasta in cold water so it does not cook anymore and keep aside
  3. Take a pan add oil, butter, thyme, oregano,leeks and chopped tomatoes and stir it for 2-3 min.
  4. Add french beans and sauté it for a minute 
  5. Now add the peppers, corn, olives, chili flakes, pepper, and salt 
  6. Finally add the pasta and mix well
  7. Add cream and cheese and check for seasonings .
  8. Serve hot.
