Ingredients
Mango Layer
- Mango pulp - 1 cup
- Gelatine - 1 tbsp
Cream Layer
- Cream - 1/2 cup
- Coconut Milk - 1/2 cup
- Grated fresh coconut - 1 tbsp
- Sugar - 2 tbsp
- Gelatine - 1 tbsp
- Vanilla essence - 3-4 drops
- Fresh fruits to decorate
Directions
- Soak the gelatin in cold water and then heat it a little in microwave for 15 sec add to the room temperature mango puree.
- Pour the mango mixture 1/2 in silicon moulds and allow it to cool in the refrigerator for 1 hr or till it sets.
- Then mix the cream, coconut milk , grated coconut,sugar ,vanilla essence and melted gelatin and heat it till completely dissolved and no lumps are remaining.
- Start to pour the second layer on the top of mango layer and allow it to cool again in refrigerator for 2 hr or till it gets set.
- Demould it and decorate it with fresh seasonal fruits.
